Hydrolysis breaks complex polymers into monomers; acidogenesis turns those into volatile fatty acids; acetogenesis converts them to acetic acid, hydrogen and CO2; methanogenesis produces methane. For fibrous feedstocks hydrolysis is usually the rate-limiting step, which is why pretreatment matters so much for straw and grass.
